Leftover Salmon

Clark and I had Salmon & Rice last night and we had leftovers of the Salmon Fillet. I’ve never had this happen before, and I didn’t know what to do with the leftovers. After Googling a bit, I came up with a Recipe… which I OF COURSE spazzed it up with my own touch. :) It turned out REALLY yummy!

SalmonPattiesSalmon Patties a’la Becky

1 (14.75 ounce) can salmon / 14 oz of leftover cooked Salmon*
2 tablespoons Canola Oil/ Olive Oil
1 small onion, finely chopped
2/3 cup crushed wheat toast
2 eggs, beaten
2/8 cup (or not quite 1/4 cup) chopped fresh parsley
1 teaspoon dry mustard
1/3 cup potato flakes
A few dashes of Garlic
A few dashes of Lemon Pepper
A few dashes of basil
1. Flake the Salmon meat. Dribble the Oil in a large skillet over medium- high heat. Add onion, and cook until tender.
2. In a medium bowl, combine the onions with the 1/3 of the crushed wheat toast, eggs, parsley, potato flakes, mustard and salmon. Mix until well blended, then shape into six patties. Coat patties in remaining toast crumbs.
3. Dribble oil in a large skillet over medium heat. Cook patties until browned, then carefully turn and brown on the other side.

REALLY tasty! I ate mine with a LITTLE bit of tartar sauce. Good stuff! Makes 5 servings.

*Wild Salmon is best. Less Mercury than farmed.

All In A Day

Up to date, here is what goes on in a typical day for Clark and I…

Our alarm usually goes off at 6am (ambitious…) and we ‘sleep’ until 8 (tee hee). Clark will go on his morning walk and I sometimes join him, but if I do – it usually happens more towards the afternoon. I am currently attempting to be more of a morning person ;)

Breakfast will either be cereal, oatmeal, cream of wheat (or cracked wheat), eggs & toast or fruit and yogurt. All depends on our taste buds, but we have options. :)

Then – also depending on if we actually do wake up earlier or at 8 or 9, we’ll eventually get to work anywhere from 8 – 10am. Currently, Clark and I have a couple BIG web projects that have been on going (thankfully! The economy has hit us, and it hasn’t been fun, but we are so blessed with the work we have!). Between that and other odds & ends jobs we have going on the side, we’ve been able to make it afloat.

For lunch, we might have something like this:

TypicalVeggieLunch While in UT my Mom gave us her old (still working like new)Lean Mean Fat Reducing Grilling Machine‘ by George Foreman. It is AMAZING! All you do is spray some zero cal cooking spray (I use Trader Joe’s Canola Oil Cooking Spray) and smash down your sandwich and within 3-5 min it’s done! Wa’la!

Clark will usually have a grilled tuna+cheese. I will have either a grilled Tofurky+Soy Cheese w/ Tomatoes or a Grilled Tuna w/ tomatoes, mustard & pickles. :) Clark will have a mixed salad on the side and I’ll have the same or some cut fresh veggies. ♥

Then when dinner comes along, we’ll have anything under the sun. Depends on how our work day went ;) . Like today for instance, we had a smooth day – so we cooked up some fresh deli fish (that was on sale, YAY!) with some steamed rice, steamed veggies and a tossed herb salad. If our day doesn’t go so smooth, we’ll make something quick, like this:

AverageDinnerWhat is included in the above dinner is : Trader Joe’s Frozen Peas, Sliced Tomato, Trader Joe’s Lightly Breaded Fish Sticks, & Organic Mac ‘n Cheese from Trader Joe’s. Relatively healthy considering the menu, but it’s nice and quick to make when the day has dragged along and you don’t feel like cooking – while still remaining pretty healthy. :)

Then, hopefully I’ll remember to take my pills. Clark is so good about taking his. :) Here is what I take:

Clark takes Juice Plus+ and sometimes Excedrin if he has a head-ache. :)

We both take Juice Plus to ensure we get the proper amounts of Fresh Fruits & Vegetable Nutrients in a day. Since the average person doesn’t get the proper amount, this is the perfect whole food alternative  in addition to a fresh fruits & veggies diet. :) Magnesium is to help with my Dysmenorrhea & also to ensure I get a proper amount within my Vegetarian diet. Vitamin D-3 is because Clark and I don’t get out into the sunshine enough (pssst… it helps with mood swings…). ;)

I’ll leave you with a ‘food for thought’… my Mom and I were talking on the phone and we agreed upon something:

“In hard-times, if I’m going to ‘go down’ I’m going to ‘go down’ healthy and survive a little longer. Because I’d rather spend my money to save my health, rather then save my money and risk my health.”

Yummy Sushi

Last night Clark and I made Sushi for the first time! It was SO GOOD!

Ingredients included the following:

  • Sushi Rice w/ Rice Vinegar
  • Cucumber
  • Avocado
  • Fresh Crab Meat (Steamed)
  • Fresh Grade Salmon, from Whole Foods (Steamed)
  • Seaweed Wrap

It’s not as hard as it may appear to make at home, and doesn’t need to cost so much. We purposely chose simple ingredients. It took us about an hour to make it.

The ingredients came to a total of $33, but most will last quite awhile. For instance: Rice Vinegar, Soy Sauce, Sushi Rice, Seaweed Wrap, Wasabi (the green spicy stuff on the plate) etc. The Fresh Salmon was $5, which will give us 2-3 dinners worth. The Crab Meat was about $5 as well, which will do the same (2-3 dinners). Really, not bad to cook at home! :)

What helps is to have a rice cooker (literally took 7 min to cook, both the rice + the salmon). It also helps to have the veggies pre-sliced. Then all you have to do is wrap them! Yum yum! A VERY healthy dinner.

For Those Who Don't Live Near Cafe Rio

One major thing that Clark and I miss about Utah is Cafe Rio. In our opinion, one of the BEST Mexican Restaurants around – but unfortunately you can only find these restaurants (and their extensions, like Costa Vida, etc) in Utah (mostly), Arizona & Nevada.

My sister in-law just emailed me a recipe that will create a pretty good equivalent entre that you’d find at Cafe Rio. I plan to try it out soon! Thanks Heather!

Pork Barbacoa (serves 12)


6lbs. pork
1 16oz bottle of salsa
1 can Coke (regular not diet)
2 cups Brown Sugar

Place pork in crock pot and fill it 1/2 way up the pork with water.
Cook on High for 5 hours.
Drain off water. Cut pork in thirds.
Mix together sauce ingredients and put on top of pork. Cook an additional 3 hours on High.
Shred pork with forks. Leave it on Low until ready to serve.

Lime-cilantro Rice


1 lb. long grain rice (2 1/4 cups)
1 bunch of cilantro
Juice of 2 limes
4 cloves of garlic

Chop garlic and cilantro. Heat 2 Tbs. of oil in a skillet.
Add rice and all chopped ingredients.
Saute for 3-5 minutes, stirring frequently.
Put 4 cups of water and lime juice in a rice cooker.
Add rice mixture to the rice cooker and cook according to the cooker’s directions.
If you don’t have a rice cooker, combine rice, water and lime juice in a 3-quart pot and bring to a boil. Then reduce heat and simmer until all the liquid is absorbed by the rice.

Creamy Tomatilla Salad Dressing


1 packet Hidden Valley Ranch Buttermilk Dressing
3 T. Salsa Verde
1/2 tsp. Tabasco
1 bunch Cilantro
2 cloves of garlic
3/4 C. Mayo
3/4 C. Sour Cream
juice of 1 Lime
Buttermilk to thin (or just use regular milk)

Blend all ingredients in the blender. Refrigerate.

Trimmings for the Salad:
Tortillas, black beans, guacamole, pico de gallo, cheese(cotija), sour cream, tortilla strips, romaine lettuce.
